Wild Silver Salmon in foil - Thursday, April 07, 2005 at 17:50

Salmon -  5 to 7 pounds

Olive oil

Shallots - diced

Tomatoes – 3 or 4 – chopped asymmetrically

Chili Stuff Bonanza Fish Mix - 1 Tblspn

Lemon juice

Salt & fresh ground Pepper

 

Place whole salmon in a sheet of foil.

Salt & Fresh Black pepper inside and out

 

Combine the tomatoes and shallots in a bowl

With Lemon juice and Bonanza Fish Mix.

Pour this mixture over salmon and fold foil closed.

 

Bake in a preheat oven at 400 degrees for 20 min.

 

Great with a simple green salad or fresh asparagus,

and fresh crusty bread.
